A Brazilian classic that is super easy to make, perfect for when you have some leftover cooked beans, and great for pairing with white rice and grilled meats!
Tropeiro Beans were a dish prepared by the Bandeirantes—Portuguese explorers in colonial Brazil in the 17th and 18th centuries—during expeditions into Brazilian territory. It was an easy-to-cook meal, with ingredients that could withstand long journeys.
You can use other herbs depending on what you have available, such as mint and arugula, and panko works as a nice substitute for cassava flour.

Ingredients
Cooked Pinto Bean
500gSliced Calabrian Sausage
200gMedium Diced Bacon
100gEgg
4Picked Parsley
to tastePicked Coriander

1Garlic
6 clovesCassava Flour
3tbspVegetable Oil
to drizzleBlack Pepper
to tasteSalt
to taste

Peel, halve and small dice 1 onion
Peel and mince 6 garlic cloves
Drizzle vegetable oil in a small skillet over medium heat
Add 2 eggs and fry for 30s
Reduce the heat to low. Season with salt and black pepper to taste
Carefully release the sides of the eggs to avoid sticking. Fry until the whites are crispy and the yolk still creamy. Repeat the process with the other 2 eggs
Add 1tbsp of extra virgin olive oil to a skillet over medium heat
Add 100g of medium diced bacon and fry until it begins to release fat
Add 200g of sliced Calabrian sausage and fry until golden brown
Add the diced onion and fry until translucent
Add the minced garlic and fry until soft
Add 500g of cooked pinto beans and mix
Rip the fried eggs by hand and add them to the skillet
Mix to combine
Add 2tbsp of cassava flour and mix
Add picked parsley and coriander to taste and mix
Add the remaining cassava flour and mix. Adjust seasoning with salt and black pepper to taste. The tropeiro beans are ready
