Bianca is a passionate foodie and autodidact baker based in Zürich, Switzerland, who after 10 years of doing business development in IT, started a bakery in her home kitchen during the pandemic of 2020. Bianca grew up in Denmark and always kept a close eye on the Danish food scene. During her studies at Copenhagen Business School, she worked for 5 years at the world-renowned restaurant Mielcke & Hurtigkarl, where she got into Nordic cuisine and later followed the growing bakery trends in Copenhagen and the rest of Scandinavia. In 2016, Bianca simultaneously developed a passion for plant-based cooking and baking, and decided to focus her bakery around Scandinavian plant-based indulgence. Today, Bianca owns a bakery and a concept shop in the heart of Zürich, and continues to bring new Scandinavian and modern French trends to the Swiss market.
