Masque

Masque is an ingredient-driven restaurant nestled within one of Mumbai’s old textile mills. The restaurant’s 10-course chef’s tasting menus marry tradition and innovation; as the seasons change, so do the menus, defined by ingredients from a network of local farmers, producers, and foraging trips. The team’s sustained effort, since opening in 2016, has been to give platform to local ingredients and extract maximum flavour from the wealth of Indian produce—a promise that’s been doubled down on with the addition of the Masque Lab, an R&D and test kitchen that opened in 2020, as well as The Living Room, the technique and ingredient-focused bar tucked away on the restaurant’s mezzanine. The central pillar of Masque’s philosophy remains a celebration of India. The team strives to create experiences with, and around, good food; not just to plate up local dishes with a twist, but to dive into the history and traditions behind regional foods and develop a new kind of modern Indian cuisine along the way—all the while high­lighting the excellence of the produce this country has to offer.
