Banana & Cinnamon Cake
Who doesn't like a cake with a cup of coffee? This one is perfect for an afternoon tea! A delicious homemade banana and cinnamon cake that can be enjoyed on its own or topped with ganaches and jams.
Preheat the oven to <temperature>150<unit>°C</unit></temperature>
Add <quantity>1<unit>tbsp</unit></quantity> of cinnamon powder to a bowl with <quantity>170<unit>g</unit></quantity> of white sugar. Stir to combine
Grease a medium loaf pan with vegetable oil
Add a portion of the cinnamon and sugar mixture to the greased pan, covering the sides and bottom. Transfer the excess back to the bowl and reserve
Weigh <quantity>255<unit>g</unit></quantity> of bananas in a bowl. Smash them with a fouet
Add the sugar and cinnamon mixture to a large bowl and add <quantity>120<unit>g</unit></quantity> of vegetable oil
Add <quantity>2</quantity> eggs and whisk to combine all the ingredients
Add <quantity>125<unit>g</unit></quantity> of all-purpose flour and <quantity>8<unit>g</unit></quantity> of baking powder
Add two pinches of salt and whisk until smooth
Add the banana and stir to combine
Transfer the batter to the prepared loaf pan
Bake for 50m until golden brown. Insert a knife into the cake to check if it's baked through. If the knife doesn't come out clean, bake for a few more minutes
Let the cake cool down and unmold it. The banana & cinnamon cake is ready
