Carp Roe Croquettes
Carp roe turned into a crispy and delicious snack!
Roughly chop <quantity>½<unit>bunch</unit></quantity> of parsley and add to a bowl
Roughly chop <quantity>4</quantity> garlic cloves and add to the bowl
Add <quantity>300<unit>g</unit></quantity> of carp roe to a bowl. Season with salt and ground black pepper to taste
Add <quantity>1<unit>cup</unit></quantity> of cornstarch, <quantity>1<unit>cup</unit></quantity> of all-purpose flour, and <quantity>3<unit>tbsp</unit></quantity> of extra virgin olive oil
Mix everything together until fully combined. If the dough feels too runny, add some extra flour
Sprinkle all-purpose flour over a plate. Grease your hands with olive oil
Gently mold the dough into round-shaped croquettes that are smaller than the palm of your hand. Press lightly to flatten a little bit and transfer to the floured plate. Repeat this process with all the dough
Add some all-purpose flour to a bowl, and dredge the croquettes in it. Press gently to form a thin coat of flour
Add <quantity>½<unit>cup</unit></quantity> of vegetable oil to a frying pan and let it heat over medium-high heat
Fry the croquettes in batches until both sides are golden brown
Transfer the croquettes to a plate lined with paper towels. The carp roe croquettes are ready
