This Cheesy Celeriac Purée is a very simple but delicious recipe! The caramelized celeriac and butter pair perfectly with the gouda cheese! It's definitely a flavor bomb!
This can be served as an appetizer, as a snack, or as a side dish with a pan-seared meat!
Here, it's combined with crispy onions and potato chips, but you can play with different topping combinations, such as crispy garlic or manioc chips!
Trim, peel, and halve 1 large celeriac. Roughly chop it
Add 2 cups of butter to a pot and melt over medium heat
Add the celeriac. Stir and cover with a lid. Cook over medium heat for 15m until the celeriac is tender and deep brown, stirring occasionally
Transfer to a blender and blend on medium speed until completely smooth and creamy. If necessary, add a little bit of water to help blend
Medium dice 200 g of gouda cheese
Add the celeriac purée and the gouda cheese to a pot. Warm over medium-low heat, stirring constantly until the cheese has melted and is completely incorporated
Turn off the heat. Season with salt and black pepper to taste
Plate some the purée in the center of a shallow serving dish. Top with crispy onions to taste
Add potato chips and smoked chili powder to taste. The Cheesy Celeriac Purée is ready
