Coal-Roasted Broccolini
Broccolini, like other quick-cooking vegetables, can be done very easily on the grill. It will be cooked in less than a minute with a nice smoky touch. This is an excellent side for either meat or vegetarian dishes.
Cover the bottom of the grill with charcoal. Form a very hot brazier, with all the coals burning hot and without ashes
Trim the stems of <quantity>1<unit>bunch</unit></quantity> of broccolini
Add <quantity>¼<unit>cup</unit></quantity> of extra virgin olive oil and season generously with salt
Place the broccolini in a heatproof basket and cook, tossing from time to time, until bright green. The coal-roasted broccolini is ready
