A vibrant and herbaceous mayonnaise. Perfect for sandwiches, seafood, and tacos. It's also great as a dipping sauce!
Crack 2 eggs and separate the yolks from the whites. Add the yolks to a tall container and reserve the whites for another recipe
Add 180 ml of vegetable oil, in a thin stream while whisking. Continue whisking until it is emulsified
Add 1 tsp of white wine vinegar and combine
Add 2 garlic cloves and the leaves of 1 bunch of coriander
Blend with a hand blender until all the ingredients are well incorporated
Add salt to taste and blend to combine
Transfer to a serving bowl. The coriander mayonnaise is ready
Use it in sandwiches, seafood, or as you like. Enjoy!
