
Country Ham Biscuit

You think the perfect breakfast doesn't exist? Well, this gets pretty close. Salty, smoky country ham, topped with melted cheddar cheese and sweet fig jam on a biscuit.
It's everything you need to get the day started, or to go back to bed for a nap!
This recipe contains enough fig jam, cheddar cheese and country ham for all biscuits, but feel free for filling as many as you’d like!

Add 550 ml of milk and 2½ tbsp of apple cider vinegar to a tall container and mix
Sift 3¼ cups of pastry flour and 2 cups of all-purpose flour into a bowl
Add 3 tbsp of baking powder and 1 tbsp of turbinado sugar
Add 1 tbsp of salt and mix to combine
Grate ¾ cup of cold butter and toss by hand until fully incorporated
Add the milk and vinegar mixture, in two batches, while mixing. Continue mixing until fully incorporated
Raise the oven temperature to 232 °C
Dust all-purpose flour on a work surface and place the dough on it. Dust flour over the dough and press it into a 2 cm thick rectangle
Fold the dough onto itself 3 times. Press it into a 4 cm thick rectangle
Grease a baking tray with butter
Punch out the dough using a 5 cm round cutter. Place them on the baking sheet
Press the remaining dough into a 4 cm thick rectangle and repeat the cutting process until there’s no dough left
Bake the biscuits for 12-15m until they rise and turn golden brown. The biscuits are ready
Preheat the oven to 425 °C
Split the biscuits in half and place them on a baking sheet. Add 2 thin country ham slices on the bottom of each
Add ¼ cup of grated cheddar cheese on top of the ham
Close with the top and bake for 5m to melt the cheese
Transfer to a serving plate and spread 1 tbsp of fig jam on the inside of each biscuit top. Close the biscuits
