Deep Fried Calamari
This squid is crispy from the time it comes out of the pan until the last bite! Deep fried calamari is a very versatile dish that can works as a great appetizer, served with some aioli and lemon wedges. It can also be part of main-course dish like a pasta with a sauce of your choice. When pairing with cocktails, light and refreshing is the way to go—like a Margarita or a Bloody Mary.
Pour 4 cups of vegetable oil into a medium pan. Bring it to 180°C over medium heat
Combine 1⅔cups of all-purpose flour, 1½cups of cornstarch, and salt to taste in a bowl
Slice 200g of clean squid into ½cm wide rings. Add them to a bowl
Season with salt to taste and 1tbsp of chopped parsley
Add 2tbsp of extra virgin olive oil and mix to combine
Add the squid to the flour mixture and mix well to coat it completely
Place the squid in a sieve and gently shake it to remove excess flour. Carefully place them in the oil. Fry for about 3m until golden brown
Transfer to a container lined with paper towels to remove excess oil. Season with more salt to taste. The deep fried calamari is ready
