Delicious and creamy Fresh Cheese.
Great with a slice of bread or to use in other recipes.
Add 200 g of crème fraîche and 250 g of heavy cream to a medium saucepan
Add 1 L of milk
Add 375 g of buttermilk
Add the juice from ½ lemon
Let it simmer over low heat until the mixture splits. Stir gently to avoid sticking to the bottom of the pan
Strain it through a cheesecloth. Fold the cheesecloth over itself
Add a weight on top and refrigerate for 1d to drain
Remove the cheese from the cheesecloth
Season with salt and ground nutmeg to taste. The fresh cheese is ready
