Add <quantity>200<unit>g</unit></quantity> of crème fraîche and <quantity>250<unit>g</unit></quantity> of heavy cream to a medium saucepan

Add <quantity>1<unit>L</unit></quantity> of milk

Add <quantity>375<unit>g</unit></quantity> of buttermilk

Add the juice from <quantity>½</quantity> lemon

Let it simmer over low heat until the mixture splits. Stir gently to avoid sticking to the bottom of the pan

Strain it through a cheesecloth. Fold the cheesecloth over itself

Add a weight on top and refrigerate for 1d to drain

Remove the cheese from the cheesecloth

Season with salt and ground nutmeg to taste. The fresh cheese is ready
