Green Burger
Fresh, seasonal vegetables cooked to order. Served with cheddar cheese, a slice of tomato, crispy lettuce, fresh red onion, and organic pickles. Finished with a tasty sauce and a fragrant herb oil. The green burger is based on a seasonal principle—using real, organic vegetables from the season, with focus on great taste. It can be green asparagus, summer zucchini, and mushrooms. Here, we used oyster mushrooms, but you can use any mushroom of your preference.
Mince <quantity>4</quantity> slices of pickled cucumber and transfer them to a container
Add <quantity>2<unit>tbsp</unit></quantity> of mayonnaise
Add <quantity>1<unit>tbsp</unit></quantity> of ketchup and <quantity>1<unit>tbsp</unit></quantity> of mustard
Mix with a spoon to incorporate all the ingredients
Season with cayenne powder and worcestershire sauce to taste
Season with salt and black pepper to taste and mix evenly. The burger sauce is ready
Thinly slice <quantity>1</quantity> red onion on a mandoline. Reserve
Remove the core from <quantity>1</quantity> beefsteak tomato and thinly slice it. Reserve
Cut off the tougher stems of <quantity>⅓<unit>bunch</unit></quantity> of dill, <quantity>¼<unit>bunch</unit></quantity> of mint, and <quantity>⅓<unit>bunch</unit></quantity> of chervil
Place them in a blender and add <quantity>⅔<unit>cup</unit></quantity> of vegetable oil
Add salt and black pepper to taste
Blend on high speed until smooth. Transfer to a container. The herb oil is ready
Cut <quantity>1</quantity> potato bun in half
Place the bun, cut side down, in a pan over low heat until it is toasted. Reserve
Melt <quantity>1<unit>tbsp</unit></quantity> of butter in a pan over medium heat
Arrange <quantity>1<unit>cup</unit></quantity> of mushrooms in the center of the pan
Season with salt and black pepper to taste
Cook the mushrooms. Flip them when they are golden brown on the bottom
Season with more salt and black pepper to taste
Add <quantity>1</quantity> slice of cheddar cheese over the mushrooms and top it with the bottom slice of the toasted bun. When the cheese is melted, hold the bread with one hand and flip all the ingredients, scraping the mushrooms with a spatula
Transfer to a serving dish and add <quantity>2<unit>tbsp</unit></quantity> of the herb oil on top
Add <quantity>4</quantity> slices of the red onion and <quantity>4</quantity> slices of pickled cucumber
Add <quantity>1</quantity> slice of the beefsteak tomato
Add <quantity>2<unit>tbsp</unit></quantity> of the burger sauce on the top bun, add <quantity>1</quantity> leaf of iceberg lettuce and flip it to cover the burger
