Green Shiso Cordial
A very herbaceous tasting cordial with shiso, also known as Japanese Nettle, that is often used in Asian cuisine. Top it with soda for a shiso soda or blend with sake and ginger beer for a Japanese mule!
Place <quantity>35<unit>g</unit></quantity> of green shiso leaves in a jug and add <quantity>150<unit>g</unit></quantity> of white sugar
Add <quantity>12<unit>g</unit></quantity> of citric acid and <quantity>½<unit>tsp</unit></quantity> of ascorbic acid
Add <quantity>500<unit>ml</unit></quantity> of room temperature water and blend
Strain through a cheesecloth. The green shiso cordial is ready
