A very herbaceous tasting cordial with shiso, also known as Japanese Nettle, that is often used in Asian cuisine.

Top it with soda for a shiso soda or blend with sake and ginger beer for a Japanese mule!

This cordial was created for one of the drinks we made in our pop-up Palo Cortado. It was a Japanese inspired Moscow Mule with Fino Sherry and sake.

  • Place 35 g of green shiso leaves in a jug and add 150 g of white sugar

  • Add 12 g of citric acid and ½ tsp of ascorbic acid

    Step 1
  • Add 500 ml of room temperature water and blend

  • Strain through a cheesecloth. The green shiso cordial is ready

    Step 3
  • Top with soda for a shiso soda or blend with sake and ginger beer for a Japanese mule. Enjoy!
