The traditional Dark and Stormy cocktail is a mixture of dark rum and ginger beer, which turns into a biphasic drink with two colors, one dark, and one light. In this version, the special touch is the addition of demerara sugar and spices syrup.
Remove stem and slice 1 young ginger
Blend the ginger on medium speed until finely minced
Pour ginger into a strainer. Squeeze well to extract all of the juice. The fresh ginger extract is ready
Add 50 g of chai massala powder and 600 ml of water in a pot on medium heat. Simmer until right before the mixture boils
Put 1 kg of demerara sugar in a separate pot
Strain the infusion into the sugar through a fine mesh sieve
Simmer on medium heat until sugar dissolves, stirring constantly. Do not let boil
Blend the warm syrup for 1m on low speed
Pour the syrup into a bottle through a funnel. The demerara sugar & spices syrup is ready
Add 30 ml of lime juice to a cocktail shaker
Add 20 ml of the demerara sugar & spices syrup
Add 10 ml of the fresh ginger extract
Add 60 ml of dark rum
Fill the cocktail shaker with ice cubes and shake vigorously until thoroughly chilled
Add 25 ml of sparkling water to a highball glass filled with ice cubes
Strain the cocktail into the glass and stir to combine
Garnish with mint sprigs to taste
