A quick and easy different take on your regular mayonnaise! The Herb Mayo is perfect for adding a herbal touch to sandwiches and burgers. It's also great to eat with fries or chicken nuggets!
You can use different herbs and types of mustard, according to what you have available.
Add 25 g of mustard and 100 g of egg yolk to the cup of a blender
Add 30 ml of lime juice and salt to taste
Blend on low speed, adding 450 ml of vegetable oil in a thin stream until the mayonnaise builds up
Add 25 g of mustard and 4 garlic cloves to a blender
Add ½ cup of picked mint leaves and 1 cup of picked parsley leaves
Add ½ cup of picked basil leaves and 2 chopped scallions
Blend on high speed until homogeneous
Transfer to another recipient. The herb mayo is ready
