Iceberg Salad with Beef Sirloin
Iceberg salad with beef sirloin and a warm cherry tomato sauce. Easy to make with readily available ingredients. This is an amazing salad to start the week!
Warm a grill over medium-high heat. Drizzle with extra virgin olive oil to coat it
Halve <quantity>2<unit>cups</unit></quantity> of cherry tomatoes
Thinly slice <quantity>2</quantity> red chilies
Small dice <quantity>1</quantity> medium white onion
Warm a pan over medium heat. Add <quantity>2<unit>tbsp</unit></quantity> of extra virgin olive oil
Add the diced onion and cook, stirring occasionally, until translucent
Generously season <quantity>1</quantity> beef sirloin with flaky salt to taste
Place the beef sirloin on the grill. Grill it until lightly charred
Add the chilies and stir. Cook until fragrant
Add the tomatoes and cook until they start to release their liquids
Flip the beef sirloin and grill the opposite side until lightly charred
Cut <quantity>1</quantity> garlic head in half. Place it on the grill, cut side down, close to the beef sirloin
Add <quantity>2<unit>sprigs</unit></quantity> of rosemary and drizzle extra virgin olive oil to taste over everything
Flip the garlic and the beef sirloin. Continue to grill the meat until all sides are lightly charred
Add <quantity>¼<unit>cup</unit></quantity> of tomato sauce. Cook for 5m to thicken it
Remove the top off <quantity>1<unit>head</unit></quantity> of iceberg lettuce. With a sharp knife, make <quantity>4</quantity> partial cuts in each direction in the center
Season with salt to taste and add another <quantity>¼<unit>cup</unit></quantity> of tomato sauce
Lightly crush the tomatoes with a wooden spoon or a spatula
Add the zest and the juice of <quantity>1</quantity> lemon. The warm cherry tomato sauce is ready
Remove the meat from the grill and let it rest for 5m to set the juices. Cut it into slices and drizzle extra virgin olive oil to taste. The grilled beef sirloin is ready
Drizzle extra virgin olive oil on the lettuce and season with salt to taste
Top the lettuce with the warm cherry tomato sauce
Drizzle balsamic vinegar reduction over the lettuce
Grate parmesan cheese to taste
Season with black pepper and salt to taste
Top the salad with the sirloin slices
Grate some more parmesan cheese to taste. The iceberg salad with beef sirloin is ready
