Kimchi Margarita
A creative version of the classic Margarita, made with the juices from kimchi that normally go to waste. This recipe is a great choice for that spicy meat or fresh snack. Juice <quantity>2</quantity> limes and add <quantity>30<unit>ml</unit></quantity> of the juice to a cocktail shaker
Add <quantity>60<unit>ml</unit></quantity> of mezcal
Combine <quantity>15<unit>ml</unit></quantity> of kimchi brine and <quantity>15<unit>ml</unit></quantity> of agave syrup and add to the shaker
Fill it with ice cubes to taste and close it tightly
Shake vigorously until thoroughly chilled
Strain it through a fine mesh sieve into a chilled old-fashioned glass
Fill the glass with ice cubes and finish with <quantity>1<unit>slice</unit></quantity> of lime. The kimchi margarita is ready
