Love kombucha? You should definitely try Kvas! This traditional fermented drink has been prepared in Ukraine since ancient times. In Ukraine, we drink Kvas to cool down when it is hot outside. Kvas is very easy to make: you will need only a few ingredients and patience!
The longer you let the mixture ferment, the more pronounced and yeasty its flavor will be! Also, one tip is to place a large dish under the jar during fermentation, as the mixture will bubble up and may leak out. Kvas can be stored in the fridge for up to 10-14 days.
Ingredients
Dark Rye Bread
400gDry Yeast
2tspCaster Sugar
70gLukewarm Water
2.5LWater
500ml

Cut 400g of dark rye bread into medium-size cubes
Add the diced bread to a skillet over medium heat and toast it for 4m until fragrant and toasty
Add 2tsp of dry yeast, 70g of granulated sugar and 2.5L of lukewarm water to a bowl and mix it
Transfer the toasted bread to a tall glass jar
Pour the sugar and yeast mixture over the bread. Add 500ml of water to fill up ⅔ of the jar
Cover the jar with a gauze cloth and use a rubber band to hold it. Leave the jar at room temperature for 1-4 days until lightly carbonated
Strain the carbonated liquid into a bowl and discard the bread
Transfer the liquid to a jug. The kvas is ready
