Potato pancakes that are crispy on the outside and soft on the inside. Addictive and delicious, these are perfect for Hanukkah!
Try it with sour cream and applesauce, smoked salmon and cream cheese, fried eggs, roasted vegetables, beef brisket or salad.
Ingredients
Large Potato
4White Onion
1Egg
1All-Purpose Flour
2½tbspVegetable Oil
to deep fryBlack Pepper
to tasteNutmeg
to tasteSalt

Peel 4 large potatoes
Coarsely grate the potatoes and transfer them to a bowl
Trim, peel, and coarsely grate 1 onion
Transfer the grated onion to a strainer and press it to drain its juices
Crack 1 egg over the grated potato and mix to combine
Add the grated onion
Add 2½tbsp of all-purpose flour and mix to combine
Add salt and black pepper to taste
Grate nutmeg to taste and mix to combine
Fill the bottom of a frying pan with vegetable oil and heat it over medium heat
Scoop the potato mix into the hot oil with a tablespoon. Press down to flatten the pancakes. This recipe will yield 10 small pancakes
Flip the pancakes and fry until they are evenly golden. Transfer to a plate with paper towel to drain excess oil
Transfer the potato pancakes to a clean plate. The latkes are ready
