
Lovage Oil

This is a base recipe for almost any green herb oil. Use it to season salads or marinate meats. The lovage can be replaced by almost any fresh herb! Try it with basil, parsley, dill, etc.
Lovage is in the same family as celery and parsley and has a similar flavor profile, only much more pungent. It has been cultivated in Europe for a very long time but is becoming an increasingly popular herb globally.
Add 1¾ cups of vegetable oil to a saucepan over medium-low heat. Warm to 50 ºC
Add 3 bunches of lovage to a blender
Add the vegetable oil. Blend on medium-high speed until completely pulverized
Strain the mixture through a fine mesh sieve. Press slightly to extract as much of the oil as possible. The lovage oil is ready
Enjoy it as a sauce on its own, as a marinade, or as the base for a salad dressing!
