A jam that takes Chef Ieda back to mango season, when the fruit was abundant and her aunts used to make this delicious sweet.

Great with yogurt, as a pie filling or on a slice of bread.

    Peel, remove the core and chop 3 mangos

  • Step 1

    Transfer to a blender and add ½cup of water. Blend to obtain a smooth purée

  • Step 2

    Transfer to a medium saucepan over medium heat

  • Step 3

    Add ½cup of turbinado sugar and stir to dissolve

  • Step 4

    Add 1tsp of ginger powder and stir to combine

  • Step 5

    Add the juice from 1 lime and cook for approximately 40m until it thickens and takes on a more golden, jam-like color

  • Step 6

    Transfer ito a bowl and let it cool down. The mango jam is ready

  • Step 7
