Mango Jam

A jam that takes Chef Ieda back to mango season, when the fruit was abundant and her aunts used to make this delicious sweet. Great with yogurt, as a pie filling or on a slice of bread.

Peel, remove the core and chop <quantity>3</quantity> mangos

Transfer to a blender and add <quantity>½<unit>cup</unit></quantity> of water. Blend to obtain a smooth purée

Transfer to a medium saucepan over medium heat

Add <quantity>½<unit>cup</unit></quantity> of turbinado sugar and stir to dissolve

Add <quantity>1<unit>tsp</unit></quantity> of ginger powder and stir to combine

Add the juice from <quantity>1</quantity> lime and cook for approximately 40m until it thickens and takes on a more golden, jam-like color

Transfer ito a bowl and let it cool down. The mango jam is ready
