
Marinated Onions

A super simple recipe that can be used in many different dishes. A perfect, versatile item to have in any refrigerator.
Quick marination is a simple way to give a longer shelf life—and explosive flavor—to almost any vegetable.
Peel and quarter 1 large red onion
Finely slice the onion quarters and add them to a bowl
Add 1 tbsp of salt and macerate by hand. Press cling film directly on the onions and let them rest for 1h to release the juices
Cut 5 limes in half and juice them
Add the lime juice to the onions and stir to combine. Cover the onions with cling film, pressing against the surface
Place in the refrigerator for 24h, until the onions are soft and bright pink
Remove from the refrigerator. The marinated onions are ready
Enjoy it! It pairs perfectly with roasted vegetables, chicken, or even fried fish tacos!
