Parmesan & Pecorino Cream
This super easy-to-make cream can be used in many dishes. Pour it over roasted vegetables, use it as a base for a soup, or try many more possibilities! You can use any hard cheese you want, and you can also make it in advance — just store it in the fridge with a cling film touching the surface of the cream.
Add <quantity>2<unit>cups</unit></quantity> of heavy cream to a saucepan over medium heat
Simmer the cream, stirring occasionally until reduced by half. Be careful so it does not overflow
Remove from heat and transfer it to a blender
Add <quantity>1<unit>cup</unit></quantity> of grated parmesan cheese
Add <quantity>1<unit>cup</unit></quantity> of grated pecorino cheese
Blend on medium speed until smooth and creamy. The parmesan & pecorino cream is ready
Try it with pasta, roasted vegetables, or as a base for different soups!
