Passiflora
A Pornstar Martini twist. Citric, herbal and sweet!
Add <quantity>500<unit>ml</unit></quantity> of gin to a sealable plastic bag or a container with a lid
Add <quantity>10<unit>g</unit></quantity> of yerba mate and stir
Close and let rest at room temperature for 24h to infuse the flavors
Place <quantity>250<unit>ml</unit></quantity> of passion fruit purée in a pot over medium heat. Bring to a soft boil
Add <quantity>2<unit>g</unit></quantity> of agar agar and stir until completely dissolved
Transfer to a bowl
Add <quantity>600<unit>ml</unit></quantity> of passion fruit purée and stir to combine. Place the mixture in the freezer for 2h until almost frozen
Remove from the freezer and stir until creamy
Set a funnel with a coffee filter, pour in the passion fruit mixture, place in the refrigerator and allow to drain drop by drop
Transfer to a bottle. The clarified passion fruit is ready
Strain the gin through a coffee filter
Store in a bottle with a lid. The yerba mate infused gin is ready
Add <quantity>40<unit>ml</unit></quantity> of the Yerba Mate Infused Gin and <quantity>40<unit>ml</unit></quantity> of the Clarified Passion Fruit to a cocktail glass
Add <quantity>10<unit>ml</unit></quantity> of vanilla syrup and <quantity>5<unit>ml</unit></quantity> of Italicus liqueur
Add <quantity>1</quantity> clear ice and stir to combine
Serve in a Nick & Nora glass. The passiflora is ready
