Pasta alla Vodka

Bring a medium pot of water to a boil. Add salt to taste
Add <quantity>1<unit>cup</unit></quantity> of radiatore pasta to the boiling water. Follow the manufacturer’s instructions to cook to al dente
While the pasta is cooking, melt <quantity>2<unit>tbsp</unit></quantity> of butter in a pan over medium heat until light brown
Add <quantity>1<unit>tbsp</unit></quantity> of minced garlic. Stir until golden brown
Add <quantity>½<unit>cup</unit></quantity> of vodka and flambé
Add <quantity>4<unit>tbsp</unit></quantity> of tomato sauce. Stir and bring to a simmer
Add <quantity>¾<unit>cup</unit></quantity> of heavy cream. Stir to combine and bring to a boil
Drain the pasta directly into the sauce. Stir to coat the pasta. Adjust salt as needed
Plate the pasta in a bowl
Grate parmesan cheese to taste. Sprinkle red pepper flakes to taste
Garnish each plate with <quantity>2<unit>tbsp</unit></quantity> of stracciatella cheese
