Radiatori pasta with a creamy pink sauce and vodka makes for a quick and easy meal. It's great for any night of the week.
This recipe became very popular in Italy and in the United States around the 1980s, when it was offered to discotheque customers.
Bring a medium pot of water to a boil. Add salt to taste
Add 1 cup of radiatore pasta to the boiling water. Follow the manufacturer’s instructions to cook to al dente
While the pasta is cooking, melt 2 tbsp of butter in a pan over medium heat until light brown
Add 1 tbsp of minced garlic. Stir until golden brown
Add ½ cup of vodka and flambé
Add 4 tbsp of tomato sauce. Stir and bring to a simmer
Add ¾ cup of heavy cream. Stir to combine and bring to a boil
Drain the pasta directly into the sauce. Stir to coat the pasta. Adjust salt as needed
Plate the pasta in a bowl
Grate parmesan cheese to taste. Sprinkle red pepper flakes to taste
Garnish each plate with 2 tbsp of stracciatella cheese
