This simple recipe will bring a new complex flavor to your drinks, with or without alcohol. We will use the freshness of pineapple and add an extra punch by caramelizing it with sugar and fire!

This is perfect for making a non-alcoholic drink—just add it to a glass with soda or sparkling water—, but it's also great to add a tropical punch to your drinks!

If you don't have a kitchen torch, you can make this recipe in a pan or in the oven!

  • Trim and peel 1 medium pineapple

  • Cut into ½ cm thick slices

  • Place the slices on a wire rack, sprinkle with white sugar to coat and torch until the sugar is caramelized

  • Flip the slices over, sprinkle with white sugar and torch to caramelize

  • Place the pineapple in a blender. Blend until a homogeneous juice is obtained without adding water

  • Set a bowl with a cheesecloth and a sieve. Strain the liquid
