Using pistachios in place of avocados, this simple dip has been on our menus since the beginning.
The Pistachio Guacamole can be used not only as a dipping sauce, but also as a spread for sandwiches, a topping for burritos and tacos, or even as a side for grilled meats.
Place ยฝ of a scotch bonnet pepper and 1 pinch of salt into a mortar
Grind until smooth
Tear 3 sorrel leaves into the mortar
Grind until smooth
Add ยพ cup of peeled pistachios. Grind until smooth
Add 80 ml of extra virgin olive oil and mix to combine
Add 25 ml of lime juice and mix to combine
Add 1 dash of water and mix to emulsify
The Pistachio Guacamole is ready! Enjoy it with totopos and some fresh drinks!
