Pistachio Guacamole
Using pistachios in place of avocados, this simple dip has been on our menus since the beginning. The Pistachio Guacamole can be used not only as a dipping sauce, but also as a spread for sandwiches, a topping for burritos and tacos, or even as a side for grilled meats.
Place <quantity>½</quantity> of a scotch bonnet pepper and 1 pinch of salt into a mortar
Grind until smooth
Tear <quantity>3</quantity> sorrel leaves into the mortar
Grind until smooth
Add <quantity>¾<unit>cup</unit></quantity> of peeled pistachios. Grind until smooth
Add <quantity>80<unit>ml</unit></quantity> of extra virgin olive oil and mix to combine
Add <quantity>25<unit>ml</unit></quantity> of lime juice and mix to combine
Add <quantity>1<unit>dash</unit></quantity> of water and mix to emulsify
