"Greek Style" Quinoa Salad. A perfect lunch, side dish or fitting for a buffet. This version of Quinoa Salad is healthy, fresh and tasty.
Chop ¼ bunch of coriander leaf
Chop ½ bunch of mint
Slice 2 cups of cherry tomatoes in half
Dice ¼ of a red onion
Remove the pits from 12 kalamata olives
Transfer 2 cups of cooked and dried quinoa to a bowl
Rinse 1 can of chickpeas and add to quinoa
Add diced red onions and olives
Add sliced cherry tomatoes
Add chopped coriander and mint
Crumble ½ cup of feta cheese
Add ¼ cup of olive oil
Add salt to taste
Mix the ingredients
Transfer to a serving bowl and enjoy on it's own or with a main dish of barbecued meat!
