Roast Beef Sandwich
A delicious roast beef sandwich that pairs perfectly with melted cheese, pickles, and red onion! This delicious and savory sandwich is perfect for eating with some chips and a cold beer!
If you can't find prato cheese, you can replace it with gouda.

Trim and halve 2 small pickled cucumbers
Trim, peel, and thinly slice ½ of a small red onion
Brush melted clarified butter to taste on 2 slices of cassava sourdough bread
Grate parmesan cheese to taste on top of each bread slice
Toast the bread, cheese-side down, and 3 thick slices of prato cheese until melted
Place the grilled bread, cheese-side down, on a cutting board and add mayonnaise to taste on each slice. Add 8 slices of roast beef on one side
Add the melted prato cheese and red onion to taste on top of the roast beef
Add the pickled cucumbers and close the sandwich. The roast beef sandwich is ready
