Royal Icing
This is a type of icing or frosting that is commonly used in cake or cookie decorating and other confectionery applications. It is made from a mixture of powdered sugar and egg whites. Royal icing is versatile and can be colored with food coloring to achieve vibrant hues.
Place <quantity>90<unit>g</unit></quantity> of pasteurized egg whites and <quantity>4<unit>tsp</unit></quantity> of lemon juice in a bowl
Whisk with a hand mixer at medium/low speed until frothy
Sift and add <quantity>450<unit>g</unit></quantity> of powdered sugar in three batches. Mix between additions
Whisk until firm peaks form
Divide the icing into three bowls
Add green food coloring to taste until you get the desired hue to one of the bowls with icing
Fill 2 piping bag with the green royal icing and another 2 with royal icing without colorant
Repeat the process with the red food coloring in another bowl of royal icing, transfer to a piping bag and secure with a knot
The royal icing is ready
