Salsa Cruda Verde
Salsa Cruda Verde is a condiment that gets nice acidity from green tomatoes, spiciness from Jalapeño peppers and that fresh floral flavor from the Cilantro. Another special ingredient in this recipe is Cambuci Pepper, a Brazilian ingredient. As this pepper is highly seasonal please note the Cambuci peppers shown in the following recipe have been frozen and then defrosted.
Peel and cut <quantity>1</quantity> onion in half
Chop the onion into big pieces
Peel <quantity>3</quantity> garlic cloves
Chop <quantity>3</quantity> green tomatoes into large pieces
Cut <quantity>1</quantity> jalapeno pepper in half
Chop <quantity>2</quantity> cambuci peppers
Add the onion, garlic, jalapeno, cambuci pepper and coriander leaf to a blender
Blend at medium high speed until fairly smooth
Add the chopped green tomatoes
Pulse to have a chunky result
Transfer blended mix to a bowl
Add salt to taste and mix well
