Trim, peel and chop ½ white onion
Chop 2 celery stalks
Cut 4 tomatoes in quarters
Add 2tbsp of vegetable oil in a pot on high heat
Add ½lb of shrimp shells. Sauté until orange color brightens
Lower heat to medium and add chopped onion and celery
Add 2 garlic cloves. Cook for 5m until onions become translucent
Add 1tbsp of smoked paprika
Add 1tsp of turmeric powder
Add 1tbsp of salt
Stir and cook for 5m to release aroma from spices
Add quartered tomatoes
Add 1.89l of water
Simmer broth for 30m until slightly reduced
Strain broth and press to extract juices. The shrimp shell broth is ready
Rinse 1 cup of hominy under warm water. Strain and reserve
Dice 1 potato
Chop 1 carrot
Slice 1 cup of mixed daikon radish
Cut 1 lemon in wedges
Slice 1 avocado
Shred ½ head of cabbage
Add 2tbsp of vegetable oil to stock pot on high heat
Add 4 sprigs of epazote. Stir to evenly fry
Add 1.89l of shrimp shell broth. Bring to boil
Add diced potato and chopped carrot. Cook for 5m to flavor broth
Add ½lb of octopus. Simmer for 15m until tender
Add ½lb of peeled shrimp. Simmer for 5m until tender
Add ½lb of pre-cooked mussels
Add the hominy. Stir to incorporate
Check that all seafood has properly cooked
Pour broth in a soup bowl, add seafood, shredded cabbage, avocado and radish slices
Finish with lemon and dig in!
