
Shrimp Bisque Reduction

This creamy Shrimp Bisque Reduction has depth, complexity and will bring your favorite pasta dish to the next level!
Trim, peel and dice 2 small red onions
Trim, peel and dice 1 large carrot
Trim and slice 1 leek
Trim and slice 2 celery stalks
Combine the chopped red onions, carrot, leek and celery stalks
Add 3 tbsp of olive oil to pan on medium-high heat
Add 500 g of shrimp heads and shells
Sautรฉ until orange color brightens
Reserve cooked shrimp heads and shells
Add the chopped vegetables, 5 dried bay leaves and 1 sprig of thyme
Cook until the vegetables soften
Add 3 tbsp of white wine
Cook until reduced by 2โ3
Add the shrimp heads and shells
Add 500 ml of water. Simmer on low heat for 30m until shrimp flavor is extracted
Transfer to blender
Blend on high for 2m until it becomes an orange paste
Strain through chinois
Keep liquid and discard solids
Reduce shrimp bisque until it coats the back of a spoon. The shrimp bisque reduction is ready
