Smoked Scarlet Eggplant
Scarlet eggplant is a very common ingredient in the cuisine from Minas Gerais, Brazil. Because of its bitterness, it is usually served overcooked, but here we changed how it is usually prepared to enhance all of its textures and unique flavors.
The Smoked Scarlet Eggplant is perfect for eating as a side dish along with other grilled vegetables when making a salad, and even as a main dish, as a form to highlight this beautiful vegetable, when served with a purée or some rice. It can also be served as it is, along with some vinaigrette or toasted bread.
Place 1 scarlet eggplant on a fire-proof surface, and blow torch it until all-sides are charred. Use a kitchen tong or a fork to help turn it around
Transfer the scarlet eggplant to a bowl and cover it with a lid. Leave it for 10m until the vegetable softens
Remove the scarlet eggplant from the bowl and peel it by gently scraping it with the help of a small knife. The smoked scarlet eggplant is ready
