Stracciatella with Apple & Celery

Peel <quantity>1<unit>stalk</unit></quantity> of celery and slice it into thin strips
Place the celery in a bowl, season with salt to taste, and add the zest of <quantity>½</quantity> lemon
Juice <quantity>¼</quantity> of the lemon and add apple cider vinegar to taste. Massage the celery by hand to evenly coat it
Cut <quantity>1</quantity> granny smith apple into quarters and remove the cores
Thinly slice a quarter of the apple on a mandoline and cut it into strips
Place <quantity>1<unit>tbsp</unit></quantity> of pistachio paste on a plate using a ring cutter or mold. Season with flaky salt to taste
Add the zest of <quantity>½</quantity> orange and olive oil to taste
Add a <quantity>¼<unit>cup</unit></quantity> of stracciatella. Spread the cheese and remove the mold
Add the apple to the celery bowl and toss gently to avoid breaking the sticks. Season with more apple cider vinegar, if necessary
Plate the celery and apple around the cheese
