Bring 237ml of water to a simmer over medium heat
Add 227g of white sugar. Stir until it is dissolved
Transfer to a container to cool. The simple syrup is ready
Mix ¾fl oz of lemon juice, ¾fl oz of the simple syrup and 59ml of gin to the smaller cocktail shaker tin
Fill a highball or a collins glass with ice and add 15ml of club soda
Fill the larger cocktail shaker tin with ice, connect them and shake for approximately 10s. Strain the cocktail into the glass
Peel a lemon twist and express it over the cocktail. Drop the twist in as a garnish. The tom collins is ready
Sip and enjoy!
