Tortillas
Many people's favorite snack. Eat the tortilla on its own with a sprinkle of salt or use to make tacos. You can also use it as a spoon to soak up all the salsa on your plate.
Hydrate <quantity>1½<unit>cups</unit></quantity> of masa harina with water following the manufacturer's instructions. If it cracks, add more water. If it's too wet, dry it out uncovered in the refrigerator for 1h
Knead to reach dough consistency and form balls of about <quantity>1.5<unit>in</unit></quantity>
Place each ball of dough between two pieces of cling film and press it until it is <quantity>2<unit>mm</unit></quantity> thick. If you don't have a tortilla press, you can roll out the dough with a rolling pin
Remove the top piece of cling film. Hold the tortilla by the bottom film and turn it over to your other hand. Gently remove the other piece of cling film
Place the tortilla on a previously heated heavy bottom pan over medium-high heat. Cook for 15s until you're able to grab it
Flip and cook for 40s. Flip again and cook for 30s until the tortilla starts to inflate. The tortilla is ready. Wrap in a cloth napkin as they come off the pan to keep them warm
