Add <quantity>140<unit>g</unit></quantity> of sugar and whisk

Add the vanilla bean and the seeds. Whisk well to incorporate

Turn on the heat to low. Cook, whisking constantly, until it reaches <temperature>85<unit>°C</unit></temperature>

Add <quantity>5</quantity> egg yolks to a bowl and carefully pour the warm milk over it while constantly whisking

Place the bowl over an ice bath and cool the mixture down to <temperature>35<unit>°C</unit></temperature>

Sieve the mixture into a pre-cooled ice cream machine

Churn the mixture for 30-40m until it reaches the desired texture. The vanilla ice cream is ready
