Vegan Chicken & Prune Tagine
The Mqeli sauce is the base of many Moroccan tagines. Here we will make this sauce with vegan chicken and use it for our prune tagine. The perfect combination of sweet and savory. Once you try, you will be addicted to it!
Soak <quantity>2<unit>cups</unit></quantity> of prunes in warm water with <quantity>½<unit>tsp</unit></quantity> of salt
Boil <quantity>¼<unit>cup</unit></quantity> of almonds for 1m. Drain them and peel the skins by scraping with a spoon
Toast the peeled almonds with <quantity>2<unit>tbsp</unit></quantity> of vegetable oil in a small saucepan over medium heat until slightly brown
Remove the toasted almonds from the heat and drain them on a paper towel
Trim, peel and small dice <quantity>1</quantity> onion
Slice <quantity>1</quantity> onion and reserve
Purée <quantity>1</quantity> onion in a food processor until almost smooth. Add a little water to help processing
Peel and finely dice <quantity>2</quantity> garlic cloves
Season <quantity>2<unit>cups</unit></quantity> of vegan chicken strips with <quantity>2<unit>tsp</unit></quantity> of ginger powder
Add <quantity>2<unit>tsp</unit></quantity> of turmeric powder
Crush saffron strands in your hand and add to taste
Add <quantity>1<unit>tsp</unit></quantity> of salt and mix to combine
Add the diced and puréed onion
Mix to combine
Add the diced garlic and mix to combine
Add <quantity>2<unit>tbsp</unit></quantity> of olive oil to a pot over medium heat. Add the mixture to cook the onions
Cover with water and stir
Add <quantity>¼<unit>bunch</unit></quantity> of coriander and cover the pot. Simmer over low heat for 30m to concentrate the flavors
Add <quantity>2<unit>tbsp</unit></quantity> of olive oil to a small saucepan and cook the sliced onions until caramelized
Drain the prunes and add them to the vegan chicken pot. Add the caramelized onions
Add <quantity>2<unit>tbsp</unit></quantity> of agave syrup and <quantity>1<unit>tsp</unit></quantity> of orange blossom extract
Add <quantity>1<unit>tsp</unit></quantity> of cinnamon powder and stir over low heat to warm
Plate the tagine
Coat some prunes in <quantity>1<unit>tbsp</unit></quantity> of sesame seed
Finish with toasted almonds to taste. The vegan chicken & prune tagine is ready
