Wafu Salad
A mixed salad dressed with a creamy Japanese-inspired sauce.
Add <quantity>1<unit>cup</unit></quantity> of mayonnaise to a mixing bowl
Add <quantity>3<unit>tbsp</unit></quantity> of rice wine vinegar and <quantity>1<unit>tbsp</unit></quantity> of shirodashi
Mix to combine
Add <quantity>1<unit>tsp</unit></quantity> of soy sauce and <quantity>1<unit>tsp</unit></quantity> of dijon mustard
Add <quantity>½<unit>tsp</unit></quantity> of togarashi and <quantity>½<unit>tsp</unit></quantity> of black pepper. Mix to combine
Add the juice of <quantity>½</quantity> lime and mix to combine
Add salt to taste and whisk to combine. The wafu dressing is ready
Cut off the root of <quantity>1</quantity> small lettuce head. Chop the leaves into bite-sized pieces and transfer them to a large bowl
Chop <quantity>3</quantity> small radishes into bite-sized pieces and add them to the bowl
Chop <quantity>1</quantity> small radicchio head and add it to the bowl
Thinly slice <quantity>¼</quantity> of a fennel bulb. Use a mandoline if available. Add to the bowl
Season with salt and black pepper to taste
Add the wafu dressing to taste and mix it all together to combine
Plate the salad
Season with furikake to taste. The wafu salad is ready
