A mixed salad dressed with a creamy Japanese-inspired sauce.

  • Add 1 cup of mayonnaise to a mixing bowl

  • Add 3 tbsp of rice wine vinegar and 1 tbsp of shirodashi

  • Mix to combine

  • Add 1 tsp of soy sauce and 1 tsp of dijon mustard

  • Add ½ tsp of togarashi and ½ tsp of black pepper. Mix to combine

  • Add the juice of ½ lime and mix to combine

  • Add salt to taste and whisk to combine. The wafu dressing is ready

  • Cut off the root of 1 small lettuce head. Chop the leaves into bite-sized pieces and transfer them to a large bowl

  • Chop 3 small radishes into bite-sized pieces and add them to the bowl

  • Chop 1 small radicchio head and add it to the bowl

  • Thinly slice ¼ of a fennel bulb. Use a mandoline if available. Add to the bowl

  • Season with salt and black pepper to taste

  • Add the wafu dressing to taste and mix it all together to combine
