The essential part of cooking fresh octopus is cleaning it and removing the inedible parts. Although it's possible to find already cleaned octopus at some fish markets, for premium prices, it is fairly easy to do it by yourself, not only reducing costs but also guaranteeing that the food is fresh.

Octopus Cleaning & Preparing

Place 1 octopus in an ice bath. Lift it and cover with ½cup of salt
Rub the salt into the octopus
Rinse the octopus by dunking into cold water. Squeeze out any extra water from the tentacles
Cut the head off the octopus
Squeeze the center of the neck while pushing upward to remove the beak. The octopus is clean and ready to cook
