Tilapia Ceviche

Ceviche is a very delicious, refreshing, and adaptable recipe! It’s ideal for serving as an appetizer or in little portions for a cocktail party.
This is the dish that opened Chef Antônio’s taste for Peruvian food. After that, he was able to learn about other recipes, such as causa limeña, and fall in love for each one of them.
Tilapia can be replaced with salmon or their firm white dish and the mango with strawberries. If you’re looking for a vegetarian version, you can use plantains instead of the fish.

Tilapia Ceviche

Cut 1 large tilapia filet into medium cubes and transfer to a bowl
Cut ¼ yellow bell pepper into slices and add to the bowl
Cut ¼ red bell pepper into slices and add to the bowl
Halve, deseed, and small dice 1 red chili. Add to the bowl
Thinly slice ½bunch of scallions and add to the bowl
Roughly chop ½bunch of parsley and add to the bowl
Roughly chop ½bunch of coriander and add to the bowl
Peel and medium dice ¼ mango. Add to the bowl
Season with salt and black pepper powder to taste
Add ½tsp of bonito soup stock and the juice of 3 limes. Adjust the acidity with more limes if needed
Add 1tbsp of extra virgin olive oil
Thinly slice ¼ red onion and add it to the bowl
Mix until everything is combined
Add 2 ice cubes into 2 margarita glasses
Plate the ceviche into the margarita glasses
Garnish with picked parsley to taste. The tilapia ceviche is ready
