Tungatjeta! My name is Fejsal Demiraj and I am Albanian, originally coming from the region of Tropoja in Albania's north. I am a chef with 20 years of professional experience from around the globe. Most notably, I worked for 6 years at Restaurant Noma in Copenhagen as a Sous Chef. I am now dedicating my career, energy and passion into researching, preserving and promoting Albanian Cuisine. I am the Chef and Founder of AMËZ: An ingredient and product development company focusing on regional Albanian Flavors from north to south.
