Lena Flaten is an outdoor chef , restaurant manager, artisan-product developer, and artisan producer from Norway. After finishing chef school in Norway, she moved to Sweden and has lived there since 1989. In 2003, after working seasonally as a chef around Europe, she founded the restaurant and production kitchen “Flammans Skafferi”, located in Storlien, a small village in Jämtland, the heart of Scandinavia. Lena is also one of Sweden’s best outdoor chefs. Her love of organic and locally-produced goods is visible in all her menus, where she is proud to profile artisans and producers from her region. Flammans Skafferi works with what's called “relationsmat” (relationship food). That means that they know the farmer, the vegetable grower, the hunter etc. making it possible to keep track of all the products that are used, their origins and the treatments given. During the year, both the staff and food friends harvest berries, fruits, mushrooms, and herbs. The fish comes from local fishermen, while the meats and vegetables are from small-scale producers in the area. These amazing products are then cooked with love and respect in a traditional spirit at Flammans Skafferi. The menu is like a sample of the area!
