Green Mayo
A Brazilian classic. The green mayonnaise is seasoned with fresh herbs. This recipe is tasty and perfect to accompany meats, burgers, rolls, sticks, and fried appetizers. You can test variations with fresh local herbs of your choice. The oil can also be canola or soy, with no difference in the final result.
Roughly chop <quantity>1<unit>tbsp</unit></quantity> of parsley leaves
Roughly chop <quantity>1<unit>tbsp</unit></quantity> of chives
Crack <quantity>1</quantity> egg into a bowl. Add the chopped parsley and chives
Season with salt and black pepper to taste
Add <quantity>1<unit>tbsp</unit></quantity> of mustard and mix with a hand blender
Slowly pour <quantity>½<unit>cup</unit></quantity> of vegetable oil in a stream, while blending, until you get a silky cream
Transfer to a bowl. The green mayo is ready
