Cheese Sauce
A nice and airy Cheese Sauce that can be used on pastas, vegetables, pizzas, sandwiches, and even as a dipping sauce! It can be made with any aged cheese you'd like, such as parmesan, aged cheddar, or romano. Use the shanks and eat the good stuff while cooking.
Melt <quantity>3½<unit>tbsp</unit></quantity> of butter in a saucepan over medium-low heat
Add <quantity>6<unit>tbsp</unit></quantity> of all-purpose flour and whisk until smooth
Add <quantity>500<unit>ml</unit></quantity> of milk while whisking. Let it cook for 15 minutes, mixing regularly, until it thickens
Season with salt to taste. The béchamel is ready
Add <quantity>100<unit>g</unit></quantity> of aged, grated cheese. Stir to combine and melt the cheese
Add <quantity>1<unit>tsp</unit></quantity> of white wine vinegar and stir. Remove from the heat. The cheese sauce is ready
