Churros
A delicious fried dough covered with sweetened cinnamon, churros make a sweet ending to a meal and are best eaten fresh. Try pairing them with ganaches, doce de leite, or even jams.
Add <quantity>103<unit>ml</unit></quantity> of water to a pot over medium heat
Add <quantity>138<unit>g</unit></quantity> of butter
Add <quantity>155<unit>g</unit></quantity> of milk
Add <quantity>5<unit>g</unit></quantity> of salt and <quantity>5<unit>g</unit></quantity> of sugar
Whisk until the butter is melted
Combine <quantity>165<unit>g</unit></quantity> of all-purpose flour with <quantity>1<unit>g</unit></quantity> of baking soda and <quantity>1<unit>g</unit></quantity> of baking powder
Add the flour mixture to the pot while whisking. Continue to whisk until the dough is completely smooth. Turn off heat
Add <quantity>4</quantity> eggs, one at a time, while the dough is still warm. Whisk constantly so the eggs do not scramble
Transfer the dough into a piping bag, preferably fitted with a star tip
Let the dough rest 30m in the fridge until completely cool
Fill a medium pot halfway with vegetable oil and bring to <temperature>350<unit>ºF</unit></temperature> over medium-high heat
Combine <quantity>200<unit>g</unit></quantity> of sugar with cinnamon to taste in a bowl
Remove the piping bag from the refrigerator and pipe the dough directly into the hot oil in a spiral shape
Fry on both sides until deep golden brown. Drain the excess oil on a paper towel
Toss in the cinnamon sugar, while still hot
