Yogurt Waffles
These fluffy Yogurt Waffles are the best idea to start your day. Enjoy them sweet with honey, Greek yogurt and berries, or try a savory twist with fresh goat cheese.
Combine <quantity>100<unit>g</unit></quantity> of all-purpose flour with <quantity>35<unit>g</unit></quantity> of cornstarch
Add a pinch of salt and <quantity> ½ <unit>tsp</unit></quantity> of baking powder. Set aside
Add <quantity>200<unit>g</unit></quantity> of Greek yogurt and <quantity>80<unit>ml</unit></quantity> of milk to a separate bowl
Add <quantity>60<unit>ml</unit></quantity> of olive oil and <quantity> ½ <unit>tsp</unit></quantity> of vanilla extract and whisk to combine
Separate the yolk from <quantity>1</quantity> large egg, add to the yogurt mixture, and whisk to combine. Reserve the egg white in different bowl
Whisk the reserved egg white with a hand mixer until soft peaks form
Add <quantity>25<unit>g</unit></quantity> of sucanat sugar in batches, whisking until incorporated and forming stiff peaks. Set aside
Preheat the waffle iron
Add the combined dry ingredients to the yogurt mixture and whisk until smooth
Fold the whipped whites into the yogurt batter in batches, mixing gently to incorporate
Place a portion of the batter in the waffle iron and cook until golden brown and crispy
Turn as needed to cook evenly on both sides
Plate the waffles and drizzle with honey to taste. The yogurt waffles are ready
