Hot Toddy Honey Mix
This is a runny honey syrup with some added depth. Although it is perfect for being used in a hot toddy, it can also be used in a Penicillin cocktail, a Bee's knees cocktail, or a Highball. You can also try it in a cup of tea or with soda if you want a refreshing drink.
Trim and chop <quantity>1<unit>stalk</unit></quantity> of lemongrass into chunks
Slice <quantity>1<unit>thumb</unit></quantity> of ginger
Peel <quantity>1</quantity> orange
Add <quantity>300<unit>g</unit></quantity> of honey to a medium pot over medium heat
Add <quantity>200<unit>ml</unit></quantity> of water and mix until the honey is completely dissolved
Add the orange peel
Add the sliced ginger
Add the chunks of lemongrass
Add <quantity>1</quantity> star anise
Simmer over medium-low heat for 20m until infused
Allow to cool down and strain into a bottle. The hot toddy honey mix is ready
Label and store in the fridge. Use it for that extra punch in your winter cocktails. Enjoy!
