Aloo Tuk
Aloo Tuk is a crispy and tender twice-fried smashed potatoes with a kick of spice mix! The spices can be swapped out for anything you have on hand, or whatever your favorite spice mix might be, but amchur—or dry mango powder—makes all the difference here. If you find it at a specialty Indian store, it'll likely be a valuable addition to your pantry.
Fill a deep pan halfway with vegetable oil. Heat the oil to <temperature>150<unit>°C</unit></temperature> over medium heat
Peel <quantity>2</quantity> potatoes. Cut each one into <quantity>8</quantity> pieces
Carefully drop the potatoes into the oil and fry them for 8m until they start to change color. Transfer them to a tray lined with paper towels and let them cool
Increase the temperature to <temperature>180<unit>°C</unit></temperature> over medium-high heat
Gently smash the potatoes between your palms, using paper towels in between, and carefully drop them into the oil
Fry the potatoes for 6m until golden brown. Transfer them to a tray lined with paper towels to remove excess oil
Plate the potatoes in a serving dish and add salt and coriander seed powder to taste
Add amchur and chili powder to taste. The aloo tuk is ready
